Mock Chopped Liver

A Vegetarian Option

A vegetarian version of a timeless Jewish favorite, this recipe is delicious as a spread, dip or even as a side dish.

oil for browning onions
2 medium onions
2 hard boiled eggs
1 can French style green beans
1/4 cup walnuts
salt to taste

Saute onions in oil until brown. Drain green beans, pressing out as much water as possible. Put all ingredients into food processor, processing until smooth. Salt to taste.

Note: You can substitute additional hard boiled egg whites for one or both of the yolks. This recipe can also be made vegan by replacing the eggs with fresh mushrooms.

I was in an online LDS divorce support group for a while after my divorce. It was not the most positive group and probably did me more harm than good, but one of the members shared this tuna casserole recipe with us which I have used every time I have made tuna casserole:

Preheat oven to 350.

Boil 2 cups pasta (noodles, macaroni, whatever you have) about 8 minutes until tender. I add a little cooking oil to the water to keep the pasta from clumping or sticking to the pan.

Combine in a casserole dish coated with cooking spray:

1 large can cream of mushroom soup - do not dilute.
1 or 2 small cans or tuna - drained.
1 can peas or veggie of choice - drained.
1/2 cup sour cream.

Mix in the cooked, drained pasta.

Bake at 350 for about 1/2 hour. Top with crushed chips or oyster crackers and sprinkle with cheese of choice and bake an additional 5 minutes to melt cheese.

I also got a recipe for brownies from someone in the same group:

2 1 oz. squares unsweetened baking chocolate
1 stick of butter (NOT margarine, it's useless)
1 1/4 cups sugar
3/4 cup flour
1 tsp vanilla
2 eggs
chopped walnuts (optional)

Melt chocolate and butter in saucepan over medium heat.
Mix together the other ingredients in mixing bowl.
Add in melted chocolate and stir it together.
Pour into 8x8 GLASS baking pan, greased.

Bake at 350 for about 1/2 hour checking frequently. Be careful not to overcook. These are best served a little soft/gooey.

Sprinkle with powdered sugar after they are cooled and cut, or for an even more decadent dessert, spread chocolate frosting over them!
